  • 2 pints grape tomatoes
  • 5 medium garlic cloves, halved
  • 1/2 cup extra-virgin olive oil
  • Salt and black pepper to taste
  • 78 oz block feta cheese
  • 10 oz dry pasta (campanelle, rigatoni, rotini, penne, bow tie, or cavatappi)
  • 8 oz spinach, roughly chopped
  • 1/4 cup fresh basil, sliced
  • 2 Tbsp fresh parsley, minced
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup reserved pasta water

Instructions

  1. Preheat oven to 400°F (200°C). In a baking dish, combine grape tomatoes, garlic cloves, olive oil, salt, and pepper. Toss to coat.
  2. Place the feta cheese block in the center of the mixture. Bake for about 30 minutes until tomatoes burst and feta is golden.
  3. While baking, cook pasta according to package instructions until al dente; reserve 1/2 cup pasta water before draining.
  4. Once baked, remove from oven and mix in spinach and cooked pasta. Stir gently until combined.
  5. Add reserved pasta water as needed for desired consistency. Serve garnished with fresh basil and parsley.
