  • 1 cup medjool dates (pitted, packed)
  • 2 tablespoons almond butter (or any nut/seed butter)
  • 1 tablespoon coconut oil (melted)
  • 1 cup chocolate chips (or an 8-ounce chocolate bar)
  • 2 teaspoons coconut oil (for melting chocolate)

Instructions

  1. In a food processor, blend the pitted medjool dates with almond butter and melted coconut oil until smooth.
  2. Line an 8-inch square baking dish with parchment paper and pour the mixture into it. Press down firmly to compact.
  3. Refrigerate for at least two hours until firm.
  4. Melt the chocolate chips with additional coconut oil over low heat until smooth.
  5. Cut the chilled date mixture into squares and dip each into the melted chocolate, allowing excess chocolate to drip off.
  6. Place coated caramels back onto parchment paper and refrigerate for another 30 minutes until set.
