  • 45 carrots
  • 23 green onions
  • 1 teaspoon sesame seeds
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon avocado oil
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Slice the cucumber in half lengthwise and cut into thin half-moons. Optionally, sprinkle with salt and rest on paper towels for 10 minutes.
  2. Peel and julienne the carrots using a julienne peeler or sharp knife.
