  • 34 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 8 oz full-fat cream cheese
  • 1 oz ranch dressing mix (1 packet)
  • 4 cups low-sodium chicken broth
  • 2 cups long-grain white rice
  • 4 cloves fresh garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Sprinkle ranch dressing mix, minced garlic, salt, and pepper over the chicken.
  3. Pour in chicken broth to keep the chicken moist during cooking.
  4. Add blocks of cream cheese on top.
  5. Cover and cook on low for about 6 hours or high for 4 hours.
  6. Once chicken is tender, gently stir in uncooked rice and cover again for an additional hour on low until rice is cooked through.
