  • 1 can Pinto beans
  • 1 block (16 oz) Extra firm tofu
  • ½ cup Walnuts
  • ½ medium White onion
  • 3 medium Garlic cloves
  • 1 medium Jalapeno
  • 2 tbsp Nutritional yeast
  • 16 medium Corn tortillas
  • Generous drizzle of Avocado oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine pinto beans, crumbled tofu, walnuts, onion, garlic, jalapeno, nutritional yeast, and spices. Bake for 25 minutes, stirring halfway.
  3. Heat corn tortillas over an open flame or in the oven until warm and pliable; spray with avocado oil.
  4. Spoon filling onto each tortilla edge, roll tightly, and place seam-side down on another parchment-lined baking sheet.
  5. Increase oven temperature to 450°F (230°C) and bake for 15–20 minutes until golden brown and crispy.
  6. For the avocado crema: Mash ripe avocado and mix with vegan yogurt, lime juice, garlic powder, and salt. Serve alongside taquitos.
