Crispy Rice Sushi Bites with Spicy Tuna are the perfect fun snack for any occasion!   • 1.5 cups sushi rice
  • 2 cups water
  • 1 sheet kombu
  • 3 Tbsp rice vinegar
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1 tsp toasted sesame oil
  • 1 lb sushi-grade ahi tuna, finely chopped
  • 3 Tbsp Kewpie mayonnaise
  • 2 Tbsp sriracha sauce
  • 1 Tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 tsp lime juice
  • thinly sliced avocado
  • toasted sesame seeds
  • furikake
  • sliced green onions
  • sliced fresh jalapeño peppers

Instructions

  1. Rinse sushi rice under cold water until clear. Combine rinsed rice, water, and kombu in a saucepan. Boil, then reduce heat and cover for 20 minutes.
  2. Remove from heat and let sit covered for 10 minutes. Discard kombu and fold in rice vinegar, sugar, salt, and sesame oil.
  3. In another bowl, mix chopped tuna with Kewpie mayonnaise, sriracha sauce, soy sauce, toasted sesame oil, and lime juice until combined.
  4. Wet hands and form the seasoned sushi rice into small squares or rectangles. Top each piece with spicy tuna mixture and avocado slices.
  5. Garnish with sesame seeds and serve immediately.
