  • 2 cans (15 oz each) white beans (cannellini)
  • 4 cups organic vegetable broth
  • 2 lbs grape tomatoes
  • 4 cloves garlic
  • 2 shallots, cut into wedges
  • 2 springs rosemary
  • Red pepper flakes, salt, and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). On a baking sheet, combine grape tomatoes, shallots, garlic, and 2 springs of rosemary. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 20 minutes.
  2. Transfer the roasted mixture to a large pot. Add white beans, vegetable broth, red pepper flakes, and remaining rosemary. Simmer for about 5 minutes.
  3. Blend until smooth using an immersion blender or regular blender.
  4. Adjust seasoning as needed before serving hot.
