  • 6 tablespoons butter
  • 1 small yellow onion (minced)
  • 2 tablespoons garlic (minced)
  • 2 teaspoons dried oregano leaves
  • 1 teaspoon dried basil leaves
  • Pinch red pepper flakes (optional)
  • 1/2 cup tomato paste
  • 1/4 cup basil pesto
  • 1 cup Nutpods unsweetened/unflavored creamer
  • 2/3 cup parmesan cheese (grated and divided)
  • 1/2 teaspoon kosher salt (more to taste)
  • Reserved pasta water (approx. 1 cup – you might not use it all)
  • Topping: additional grated parmesan cheese and fresh basil leaves

Instructions

  1. Cook the rigatoni pasta according to package instructions until al dente, reserving about 1 cup of the starchy pasta water.
  2. In a deep skillet, melt 3 tablespoons of butter over medium heat. Add minced onion and garlic, sautéing until fragrant.
  3. Stir in oregano, basil, and optional red pepper flakes. Add tomato paste and creamer; mix well.
  4. Gradually incorporate parmesan cheese and salt, adjusting seasoning to taste.
  5. Combine the drained pasta with the sauce mixture, adding remaining butter and enough reserved pasta water until you reach a creamy consistency.
  6. Serve hot, garnished with additional parmesan cheese and fresh basil.
