  • 3 1/2 Cups Corn (Fresh, canned or frozen)
  • 1 Cup Black Beans (drained and rinsed)
  • 1 Large Red Bell Pepper (diced)
  • 1 Medium Sweet Onion (finely diced)
  • 23 Fresh Jalapeños (diced, seeds, and veins removed for a mild taste)
  • 1/4 Cup Pickled Jalapeño
  • 5 ounces Cream Cheese (can use light or fat-free)
  • 1 Cup Grated Cheddar Cheese
  • 1 teaspoon Smoked Paprika
  • Salt and pepper, to taste
  • 2 tablespoons Fresh Chopped Cilantro (to garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté diced sweet onion until translucent (3-4 minutes), then add minced garlic and cook until fragrant.
  2. Stir in corn, black beans, diced red bell pepper, and jalapeños. Season with smoked paprika, salt, and pepper; sauté for another 3-4 minutes until warmed through.
  3. Remove from heat and mix in cream cheese until melted. Add grated cheddar cheese and stir until fully combined.
