  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1.5 pounds uncooked chicken breasts (boneless skinless)
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 2 cups uncooked egg noodles
  • Salt & pepper (to taste)
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Sauté the celery, carrots, and onion in olive oil and butter over medium-high heat for about 5-7 minutes.
  2. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add flour and cook for another minute to create a roux.
  4. Gradually pour in chicken broth while stirring until smooth; add chicken breasts, Italian seasoning, and heavy cream. Bring to a gentle boil.
  5. Reduce heat to simmer for about 10 minutes until chicken is tender.
  6. Stir in uncooked egg noodles, cover partly, and cook for another 8-10 minutes until noodles are cooked through.
  7. Remove cooked chicken, chop into bite-sized pieces, return to pot, season with salt and pepper, and stir in fresh parsley before serving.
