  • 1 head of romaine
  • 2 hard boiled eggs
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup crumbled blue cheese
  • 5 slices turkey bacon or grilled chicken
  • 3 cups bread cubes (french baguette)
  • 1 1/2 tbsp olive oil (for croutons)
  • 1 tsp garlic powder (for croutons)
  • Salt & pepper to taste (for croutons)
  • 1/4 cup olive oil (for dressing)
  • 1/2 lemon, juice (for dressing)
  • 1 tsp dijon mustard (for dressing)
  • 1 tsp honey (for dressing)
  • 1 tsp warm water (for dressing)
  • Salt & pepper to taste (for dressing)

Instructions

  1. Preheat oven to 375°F (190°C). Toss bread cubes with olive oil and garlic powder; spread on a baking tray.
  2. Bake for 12 minutes until golden brown and crispy.
  3. Hard boil eggs by boiling them for about 10 minutes; then cool in ice water.
  4. Prepare turkey bacon as directed until crispy.
  5. Whisk together olive oil, lemon juice, dijon mustard, honey, warm water, salt, and pepper for the dressing.
  6. Assemble salad by layering romaine, tomatoes, cheese, sliced eggs, turkey bacon pieces, and croutons. Drizzle with dressing.
  7. Serve immediately and enjoy!
