  • For Topping: 1/4 cup granulated sugar, 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and spices.
  3. In another bowl, beat eggs and mix in pumpkin puree, milk, and vegetable oil until smooth.
  4. Combine wet ingredients into dry ingredients; stir gently until just mixed.
  5. Fill muffin tins two-thirds full with batter.
  6. For topping: mix sugar and cinnamon; sprinkle over muffins before baking.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
  8. Let cool slightly before transferring to wire rack.
