  • 24 teaspoons honey
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic chili sauce
  • 23 cups fresh pea pods (thinly sliced diagonally)
  • 1 cup edamame (thawed)
  • 1 cup mini cucumbers (quartered)
  • 1 cup purple cabbage (thinly sliced)
  • 1/2 cup matchstick carrots
  • 1/3 cup peanuts (chopped)

Instructions

  1. Make the Dressing: In a small bowl, whisk together 1/2 cup sweet chili sauce, 1/4 cup extra virgin olive oil, 1 tablespoon rice vinegar, 2-4 teaspoons minced garlic, 2-4 teaspoons honey, 1 teaspoon sesame oil, and 1 teaspoon garlic chili sauce. Set aside.
  2. Combine Salad: In a large bowl, mix together 2-3 cups thinly sliced fresh pea pods, 1 cup thawed edamame, 1 cup quartered mini cucumbers, 1 cup thinly sliced purple cabbage, 1/2 cup matchstick carrots, and 1/3 cup chopped peanuts.
