  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk (dairy or plant-based)
  • 1 large egg (or 1 flax egg)
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon olive oil or melted coconut oil
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon maple syrup or coconut sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon chia seeds (optional, for thickening)

Instructions

  1. In a mixing bowl, whisk together chickpea flour, baking powder, cinnamon, and salt. Create a well in the center and add milk, egg (or flax egg), maple syrup (or honey), and olive oil. Mix until smooth.
  2. Preheat a non-stick skillet over medium heat. Grease lightly if necessary. Pour about 1/4 cup of batter onto the skillet; cook for 3-4 minutes until bubbles form on top. Flip and cook an additional 2-3 minutes until golden brown.
  3. For the blueberry compote, combine blueberries, maple syrup (or coconut sugar), and lemon juice in a saucepan over medium heat. Simmer for about 5-7 minutes until thickened.
  4. Serve pancakes topped with blueberry compote.
