  • 1 lb ground chicken
  • 1/2 cup chopped mushrooms
  • 3/4 cup chopped zucchini
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrot
  • 1/4 cup grated parmesan cheese
  • 1/2 cup almond flour
  • 1 egg
  • 1 1/2 cups marinara sauce
  • Olive oil (for sautéing)
  • 2 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Finely chop the onion, carrots, zucchini, and mushrooms.
  2. In a pan over medium-high heat, heat olive oil and sauté the vegetables with garlic powder, salt, and pepper until softened (about 5-7 minutes).
  3. Allow the sautéed vegetables to cool slightly. In a large bowl, mix together ground chicken, egg, parmesan cheese, almond flour, Italian seasoning, and cooled veggies until just combined.
  4. Roll the mixture into meatballs about the size of two tablespoons.
  5. Heat olive oil in a nonstick pan over medium-high heat. Cook meatballs until browned on all sides (about 3-4 minutes per side).
  6. Once browned, add marinara sauce to the pan with meatballs. Cover and simmer for about 15 minutes.
  7. Serve warm over pasta with additional marinara sauce.
