  • 1 tbsp olive oil (divided)
  • 2 boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)
  • 2/3 cup shredded parmesan cheese (divided)
  • 1 medium yellow onion (minced)
  • 46 cloves garlic (minced)
  • 14 oz jar marinara sauce
  • 8 oz short dry pasta (gluten-free if needed)
  • Fresh basil (for garnish)

Instructions

  1. Heat half the olive oil in a large skillet over medium-high heat. Season the chicken with Italian seasoning, salt, and pepper. Cook for 4-6 minutes until golden brown.
  2. Sprinkle ⅓ cup of parmesan cheese over the chicken and let it melt.
  3. In the same skillet, add remaining oil, minced onion, and garlic; sauté for 2-4 minutes until softened.
  4. Stir in marinara sauce and let simmer for 3-5 minutes.
  5. Meanwhile, cook pasta according to package instructions, reserving about ¼ cup of pasta water before draining.
  6. Combine cooked chicken with the sauce and drained pasta; toss to coat well using reserved pasta water as needed.
  7. Serve immediately with extra parmesan cheese and fresh basil on top.
