  • 1820 ladyfingers
  • 1 1/4 cups heavy whipping cream
  • 1 cup mascarpone cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups cherry compote (homemade or store-bought)

Instructions

  1. Whip the heavy cream until soft peaks form, then set aside.
  2. In another bowl, mix mascarpone cheese, powdered sugar, and vanilla until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. Dip ladyfingers in cooled espresso briefly and arrange them in a single layer in a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Spoon cherry compote over the mascarpone layer.
  7. Add another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  8. Cover and refrigerate for at least 6 hours or overnight before serving.
