  • 3 minced garlic cloves
  • 1/4 cup brewed barley tea
  • 1 cup heavy cream

Instructions

  1. Allow the Bavette steak to rest at room temperature for 20 minutes before cooking. Pat it dry and season generously with salt, pepper, and garlic powder.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the steak for 4–5 minutes per side until a crust forms and reaches an internal temperature of 130°F (54°C).
  3. Remove the steak and let it rest for 5–10 minutes.
  4. In the same skillet, reduce heat to medium, melt butter, and sauté minced garlic until fragrant (1–2 minutes).
  5. Add brewed barley tea, scraping any browned bits from the pan; simmer for 2–3 minutes.
  6. Stir in heavy cream and let it thicken for about 5 minutes while seasoning to taste.
  7. Slice steak against the grain and serve topped with the garlic cream sauce.
