  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 ripe bananas, sliced thick
  • 1/2 cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for about 8 minutes. Let cool.
  2. Lower oven temperature to 325°F (163°C). Beat cream cheese until smooth; gradually add sugar and eggs one at a time. Mix in sour cream and vanilla until combined.
  3. Pour filling over cooled crust and bake for 55–65 minutes until edges are set but center jiggles slightly. Cool in the oven with door cracked for an hour.
  4. Chill in the fridge for at least 4 hours or overnight.
  5. In a skillet, melt butter and brown sugar; add banana slices and cook until golden brown.
  6. For glaze, melt butter and brown sugar over low heat; stir in vanilla extract and simmer.
  7. Assemble by topping chilled cheesecake with caramelized bananas and drizzling with glaze.
