  • 3 cups penne pasta
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 shallot, finely diced
  • 1 zucchini, chopped
  • 1 cup grape tomatoes, halved
  • 1/2 cup corn
  • 1 tsp Italian seasoning
  • 1 1/4 cup marinara sauce
  • 1/2 cup parmesan cheese
  • 8 oz burrata cheese
  • Fresh basil for garnish

Instructions

  1. Boil the penne pasta according to package instructions until al dente.
  2. In a large pan over medium-high heat, sauté the olive oil with minced garlic and diced shallot for about 3-5 minutes until softened.
  3. Add the chopped zucchini, halved grape tomatoes, corn, Italian seasoning, salt, and pepper. Sauté for another 10 minutes until vibrant.
  4. Lower the heat and stir in the marinara sauce and parmesan cheese. Let it simmer until the cheese melts.
  5. Drain the pasta (reserving some water) and combine it with the sauce in the pan. If needed, add reserved pasta water to adjust consistency.
  6. Serve in a bowl topped with burrata and fresh basil.
