  • 1 small yellow onion (minced)
  • 3 tablespoons garlic (minced)
  • 1 small jalapeño (minced, seeds removed)
  • 1 1/2 cups celery (thinly sliced)
  • 1 cup carrots (peeled, sliced and quartered)
  • 1 large russet potato (cubed)
  • 3 tablespoons all-purpose flour (or gluten-free flour)
  • 5 1/2 cups chicken broth
  • 1 pound boneless skinless chicken breast
  • 1/2 cup Frank's RedHot Wing Sauce
  • 48 oz cream cheese (softened)
  • Salt and black pepper to taste
  • Optional toppings: crumbled blue cheese, sliced green onion

Instructions

  1. In a large pot over medium-high heat, melt 2 tablespoons of butter. Sauté the minced onion and garlic until fragrant.
  2. Add jalapeño, celery, carrots, and potatoes; cook for about 4-5 minutes.
  3. Stir in the remaining butter until melted, then sprinkle in the flour to coat the vegetables.
  4. Gradually add chicken broth while stirring continuously until combined. Bring to a simmer.
  5. Add chicken breast, cover, and simmer for 12–15 minutes or until cooked through.
  6. Remove chicken, shred it with two forks, and return it to the pot along with Frank's RedHot Wing Sauce.
  7. Stir in cream cheese until fully melted. Season with salt and pepper.
