  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower)
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Coat chicken with half of the buffalo sauce.
  4. Bake on a lined baking sheet for 20-25 minutes until cooked through.
  5. Shred the chicken and mix with remaining buffalo sauce.
  6. Prepare rice as directed; sauté cauliflower rice if using.
  7. Assemble bowls: layer rice, shredded chicken, chopped celery, cherry tomatoes, and avocado.
  8. Drizzle dressing over top and garnish as desired.
