  • 8 ounces whole-wheat pasta
  • 1 large head of broccoli (about 1 pound)
  • 2 tablespoons olive oil
  • 1 small white onion
  • 8 ounces cremini mushrooms
  • 4 cloves garlic (minced)
  • 2 tablespoons cornstarch
  • 1.5 cups milk of choice
  • 1 cup chicken or vegetable stock
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 2 cups diced cooked chicken breast
  • 1.5 cups shredded cheddar cheese (divided)

Instructions

  1. Preheat the oven to 400°F. Cook the pasta according to package instructions until al dente; add broccoli in the last minute of cooking.
  2. Drain pasta and broccoli, rinse with cold water, and set aside.
  3. In a pan, heat olive oil over medium-high heat. Sauté the onion for about three minutes, then add mushrooms and garlic; cook until golden.
  4. Whisk together cornstarch with a quarter cup of milk in a bowl. In the pan, combine stock and remaining milk; stir in Dijon mustard, salt, and pepper.
  5. Once simmering, add cornstarch mixture until thickened. Stir in one cup of cheese until melted.
  6. In a baking dish, combine pasta, broccoli, and chicken; pour sauce over all ingredients and stir to coat.
  7. Top with remaining cheese and bake for about 15 minutes or until bubbly.
