  • 250 g digestive or graham crackers
  • 75 g butter
  • 300 g fresh blueberries
  • 800 g cream cheese (room temperature)
  • 260 g granulated sugar
  • 200 g sour cream (room temperature)
  • 4 large eggs
  • 1 tbsp all-purpose flour
  • 1 tbsp granulated sugar
  • 2 tsp lemon juice
  • 110 g all-purpose flour
  • 80 g dark brown sugar
  • 70 g butter
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F). In a bowl, mix crushed crackers with sugar and melted butter. Press into the bottom of a springform pan.
  2. Toss blueberries with sugar, flour, and lemon juice in another bowl. Set aside.
  3. Beat cream cheese until smooth in a large bowl. Gradually add sugars, then sour cream, cornstarch, vanilla extract, and eggs one at a time until well combined.
  4. Layer half the batter over the crust, add half the blueberries, then repeat with remaining batter and blueberries.
  5. Bake for about 85 minutes or until set but slightly jiggly in the center. Let cool before refrigerating for at least four hours.
