  • 3/4 cup + 3 tablespoons cake flour
  • 3/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 4 tablespoons unsalted butter (room temperature)
  • 1/2 cup hot brewed coffee
  • 1/2 cup Dutch-processed cocoa powder
  • 1/4 cup black cocoa powder
  • 1/2 cup sour cream (room temperature)
  • 1/4 cup whole milk (room temperature)
  • 4 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and line a cupcake pan with liners.
  2. In a large bowl, mix cake flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Add cubed butter to the dry ingredients and mix until it resembles coarse sand.
  4. In another bowl, whisk together hot coffee and both cocoa powders until smooth. Stir in sour cream, milk, vegetable oil, and vanilla.
  5. Combine wet ingredients with dry ingredients in two additions, mixing gently until just incorporated.
  6. Fill cupcake liners about three-quarters full with batter.
  7. Bake for 18-25 minutes or until a toothpick inserted comes out clean. Cool on wire racks.
  8. For frosting: Beat room-temperature butter until smooth; gradually add powdered sugar and black cocoa powder along with heavy cream and vanilla until well combined.
  9. Frost cooled cupcakes with the buttercream and decorate as desired.
