  • 1/4 cup mayo
  • 1 tablespoon extra virgin olive oil
  • 24 tablespoons lime juice
  • zest of 1 lime
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons mayo
  • 2 teaspoons lemon juice
  • 1 teaspoon white grape juice vinegar
  • pinch of kosher salt
  • 2 cups angel hair cabbage/slaw
  • oil for pan (avocado oil or peanut oil)
  • 1.5 pounds cod fillets
  • 1 cup all-purpose flour
  • 1/2 cup rice flour OR cornstarch (+ more for sprinkling)
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt (+ more for seasoning)
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon Old Bay Seasoning
  • 1/2 teaspoon onion powder
  • 12 oz bottle very cold beef broth
  • tortillas of your choice

  • pico de gallo

Instructions

  1. Prepare the cilantro lime sauce by blending Greek yogurt, mayo, olive oil, lime juice, lime zest, cilantro, salt, and pepper until smooth.
  2. Make the slaw by mixing mayo, lemon juice, white grape vinegar, and salt before tossing in shredded cabbage.
  3. Heat oil in a deep skillet to 375-400°F.
  4. Cut cod fillets into bite-sized pieces and season with salt and pepper.
  5. Whisk together all-purpose flour, rice flour (or cornstarch), baking powder, Old Bay seasoning, and onion powder; slowly mix in very cold beef broth until smooth.
  6. Dredge fish pieces in batter and fry until golden brown on both sides (approximately 2-2½ minutes per side).
  7. Assemble tacos with slaw, crispy fish, pico de gallo, and drizzle with cilantro lime sauce.
