  • 2 lb beef roast (cut into 1-inch cubes)
  • Kosher salt and pepper (to taste)
  • 2 tsp Italian seasoning
  • 1 tsp cayenne pepper
  • 2 tbsp olive oil
  • 34 cloves garlic (minced)
  • 1 lb button mushrooms (sliced)
  • 1 large onion (diced)
  • 2 large carrots (chopped)
  • 3 ribs celery (chopped)
  • 2 tbsp balsamic vinegar
  • 10 cups beef broth
  • 12 oz egg noodles or egg-free ribbons
  • Optional: freshly chopped parsley (to garnish)

Instructions

  1. Season beef cubes with salt, pepper, Italian seasoning, and cayenne pepper.
  2. Heat olive oil in a large pot over medium heat. Sear seasoned beef until golden on all sides; set aside.
  3. In the same pot, sauté garlic and mushrooms for about five minutes until fragrant. Then add onion, carrots, and celery, sautéing for an additional five minutes.
  4. Return seared beef to the pot along with balsamic vinegar and beef broth. Bring to a boil; reduce heat and simmer for approximately one hour until beef is tender.
  5. Add noodles to the pot and cook according to package instructions (about 6–8 minutes).
  6. Let sit briefly before serving; garnish with parsley if desired.
