  • 2 large carrots (roughly chopped)
  • 2 stalks celery (roughly chopped)
  • 1 large yellow onion (roughly chopped)
  • 34 garlic cloves (minced)
  • 2 tablespoons olive oil
  • Kosher salt & ground black pepper (to taste)
  • 1.5 pounds lean ground beef
  • 6 ounces tomato paste (one can)
  • 28 ounces crushed tomatoes (one can)
  • 2 cups low-sodium chicken broth
  • 34 sprigs fresh rosemary (chopped)
  • 1012 sprigs fresh thyme (leaves picked)
  • 2 bay leaves
  • 1 parmesan rind
  • 1/2 cup grated parmesan
  • 16 oz pasta of choice (whole-grain, gluten-free if needed, or lentil pasta)

Instructions

  1. In a food processor, pulse the carrots, celery, onion, and garlic until finely chopped.
  2. Heat olive oil in a large pan over medium heat; sauté the vegetable mixture until soft.
  3. Add ground beef to the center of the pan, seasoning with salt and pepper; cook until browned.
  4. Stir in tomato paste, crushed tomatoes, and chicken broth; mix well.
  5. Add rosemary, thyme, and bay leaves; let simmer on low for about an hour.
  6. Cook pasta according to package instructions and reserve some pasta water.
  7. Discard bay leaves; combine pasta with sauce and reserved water; toss in grated parmesan.
  8. Serve warm with additional parmesan as desired.
