  • 1 pound boneless skinless chicken breasts
  • ½ cup BBQ sauce
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 avocado, diced
  • ½ cup canned corn, drained
  • ½ cup black beans, rinsed and drained
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • ¼ cup shredded cheese, cheddar or Monterey Jack
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, paprika, and garlic powder. Spread on a parchment-lined baking sheet.
  3. Roast sweet potatoes for about 25 minutes until golden brown and tender.
  4. In a skillet over medium heat, cook seasoned chicken breasts in remaining olive oil for 6-7 minutes per side. Brush on BBQ sauce in the last few minutes of cooking.
  5. Assemble bowls starting with sweet potatoes as the base topped with sliced chicken and your choice of toppings.
