  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into 1/2 inch chunks; chop onion into 1 inch pieces. Place on a lined sheet pan, drizzle with olive oil, salt, garlic powder, and chipotle or chili powder. Toss well and roast for about 20 minutes.
  3. After roasting, toss sweet potatoes and onions, then add broccoli florets to one side of the pan; drizzle with olive oil and sprinkle with salt. Place chicken on the other side; brush generously with BBQ sauce. Return to oven for an additional 15-20 minutes until chicken is cooked through.
  4. Remove from the oven and shred chicken using two forks; mix with remaining BBQ sauce.
  5. Assemble bowls by dividing roasted veggies and shredded chicken among three servings.
