  • 2 pints cherry tomatoes
  • 8 ounces feta cheese
  • 1/2 cup olive oil
  • 3 garlic cloves (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil (chopped)

Instructions

  1. Preheat your oven to 400°F.
  2. In an 8×11 baking dish, combine cherry tomatoes, olive oil, garlic, salt, and pepper. Toss to coat.
  3. Place the feta cheese in the center of the dish among the tomatoes.
  4. Bake for about 35 minutes until the tomatoes burst and the feta melts.
  5. Cook your pasta according to package instructions; reserve 1/4 cup of pasta water.
  6. Once done baking, add fresh basil to the tomato-feta mixture and stir gently.
  7. Toss in cooked pasta and mix thoroughly. Add reserved pasta water if needed for consistency.
