  • 1 ½ lb Skinless boneless chicken breasts (cut into bite-sized pieces)
  • 1 medium Head of cauliflower (broken into florets)
  • 1 Bell Pepper (diced into large pieces)
  • 1 Large Zucchini (cut into chunks)
  • 2 Medium Red Onions (cut into wedges)
  • ⅔ Cup Roasted unsalted cashews
  • Salt and black pepper, to taste
  • ½ Cup Low-sodium soy sauce or coconut aminos
  • 1 Tbsp Hoisin Sauce
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Raw Honey
  • 1 Tsp Fresh Ginger (or powder)
  • 1 Tsp Garlic Powder
  • 1 Tbsp Gluten-free Flour
  • 1 Tbsp Sesame Seeds (for garnish)
  • 2 Tbsp Fresh Chopped Parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together the sauce ingredients until well combined.
  3. Place chicken pieces on a lined sheet pan; season with salt and pepper and coat with one-third of the sauce.
  4. Bake chicken for 6-8 minutes.
  5. Add cauliflower, bell peppers, onions, and cashews around the chicken; drizzle with remaining sauce and toss gently.
  6. Return to the oven and bake for another 8-12 minutes until chicken is cooked through and veggies are crisp-tender.
  7. Garnish with sesame seeds and parsley before serving.
