  • 23 medium carrots (sliced)

  • 1 cooked rotisserie chicken (shredded)
  • 2 bay leaves
  • 1 cup rice
  • 10 cups low-sodium chicken stock
  • 1 large organic lemon (juice and zest of)
  • 2 large eggs
  • 2 egg yolks
  • Kosher salt and pepper (to taste)
  • 3 tablespoons finely chopped parsley
  • 2 tablespoons chopped fresh dill

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sauté diced onion, celery, carrots, and minced garlic for 5 minutes until softened.
  2. Add shredded chicken, bay leaves, rice, and chicken stock. Bring to a gentle simmer and cook for 30 minutes until vegetables are tender.
