  • 1/2 cup + 2 tbsp sugar (divided)

  • 2 large eggs
  • 3 medium apples (peeled and chopped)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3/4 cup flour
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup quick-cook oats

Instructions

  1. Preheat your oven to 350°F. In a food processor, mix flour, brown sugar, and cold butter until crumbly. Press into a lined 13×9 inch pan and bake for 15 minutes.
  2. Beat softened cream cheese until fluffy; add sugar and vanilla, mixing until smooth. Incorporate eggs one at a time.
  3. Toss chopped apples with cinnamon, nutmeg, and the remaining sugar.
  4. For the crumble topping: Combine flour, brown sugar, oats, and cold butter in the food processor until crumbly.
  5. Spread cheesecake filling over warm crust; layer with spiced apples followed by crumble topping. Bake for 25-30 minutes until set. Cool completely before refrigerating.
