  • ¼ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • ⅓ cup brown sugar
  • 2 large eggs
  • 3 medium apples, peeled and sliced
  • ¼ cup light brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup rolled oats

Instructions

  1. Preheat oven to 325°F (163°C). In a medium bowl, mix graham-cracker crumbs, granulated sugar, and melted butter until combined. Press firmly into a 9-inch springform pan.
  2. In a large bowl, whisk cream cheese until smooth; add brown sugar and blend well. Mix in sour cream, then add eggs one at a time until just combined.
  3. Pour cheesecake batter over crust evenly. Toss sliced apples with light brown sugar and cinnamon; layer over the cheesecake.
  4. Bake for 35–40 minutes until edges are set but center jiggles slightly. Cool in the oven with door cracked for an hour.
  5. Chill in the refrigerator for at least four hours or overnight.
  6. For the crumble topping, mix rolled oats with melted butter and sprinkle over chilled cheesecake. Bake at 375°F (190°C) for 12–15 minutes until golden brown.
  7. Allow to rest before slicing and serve warm or at room temperature.
