  • 1 1/2 cups crushed Oreos (with filling)
  • 5 tbsp melted butter
  • 2 (8 oz) packages softened cream cheese
  • 2 tbsp sour cream
  • 1 tbsp corn starch
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup Andes mint baking chips (or chopped Andes candies)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 6-inch springform pan and wrap it in aluminum foil.
  2. In a food processor, crush Oreos into fine crumbs and mix with melted butter. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes.
  3. In a large bowl, beat together cream cheese, sour cream, corn starch, sugar, and vanilla until smooth. Add eggs one at a time, mixing gently to avoid overmixing. Fold in chopped Andes mints.
  4. Pour the filling over the crust. Create a water bath by placing the springform pan in a larger dish filled with boiling water. Bake for about 60 minutes or until set.
  5. Cool the cheesecake gradually in the oven with the door ajar for 30 minutes before chilling in the fridge for at least 4–6 hours or overnight.
